Beet That

My Southside Star Community is finally producing something.  The weather in Minnesota has been very wet this summer until July.  Consequently, everything is very late.  I should have had that cherry tomatoes at least 2 weeks ago.  But today I picked a pretty bunch of rainbow chard, a baby zucchini with the flower still on, a couple more cherry tomatoes and a long green garden salsa pepper.  

For dinner I had beets two ways.  I chopped all the chard and sautéed it in butter with onions and garlic, then shaved parmesan cheese over it.  Then I made a sweet and sour salad with blue cheese and some roasted beets from the farmers market.  Awesome.  Granted my pee will be purple for a week, but it was still good.
