Dandelion Shrub Recipe

Ingredients:

4 cups dandelion flower petals
1 cup white wine vinegar
1 cup sugar
1 cup water

Instructions:

Remove all stems, leaves or green matter from your dandelion petals or you’ll have some bitter flavors.  Dissolve the sugar in the vinegar and water, then pour it over the flower petals.  Store in a dark cool place (cupboard or fridge is fine) for several weeks.  Strain, then return to the dark cool place.  To make a shrub, mix 1 part shrub syrup to 2 parts sparkling water over ice.  For a shrub cocktail, mix 1 part shrub syrup, 1 part mild gin or vodka, 1 part sparkling water or champaign on the rocks.  Put a dandelion in your hair and skip through the grass.  Now isn’t that better?
