Home Made Cola Soda Pop

Ingredients:

1 large orange, zested & juiced
1 large lime, zested & juiced
1 large lemon, zested & juiced
1 two inch cinnamon stick
1/8 tsp freshly grated nutmeg
1/4 tsp crushed fennel seed
1/2 tsp dried lavender flowers
2 tsp earl grey tea leaves
1 tbs grated ginger
1 two inch piece vanilla bean, split
1 1/4 cups water
2 c sugar
2 tbs honey
1 tbs brown sugar

Instructions:

Combine all ingredients except the sugars in a heavy sauce pan.  Bring to a boil and simmer for 15 minutes. Add sugars and return to a boil, stirring until sugar is dissolved. Strain syrup through two layers of cheese cloth into a clean glass container. Press solids through the cheese cloth, eventually gathering up cloth and twisting to get the last bits (especially the vanilla seeds.) Mix with soda water and ice to taste for a fantastic soda pop. But really, I think this needs a little bourbon to make it truly excellent.
